Shredded Sweet Pork

We did a dinner with a group of friends the other night. We all contributed to the dinner. Mexican themed...
I made a sweet pork for the burritos that turned out pretty good.

I looked at this recipe, and I was going to post this recipe- but I realized I didn't really follow it, at all. I used same ingredients.....

It turned out SO good. It was different from the other "cafe rio" wanna be sweet pork recipes I've made in the past.

Shredded Sweet Pork
Ingredients
1-2 lbs boneless pork roast*
2 liters of coke
1 small can of enchilada sauce
1 small (4 oz) can of green chilies
1 1/2 cup of brown sugar
tsp of garlic salt
Instructions
Put pork roast in crock pot with 1 liter of coke for 4 hours.
my roast was frozen so I cooked it on high.
After 3-4 hours dump coke out of crock pot, leave roast in and I separated the roast into 3 sections....
put can of green chilies, brown sugar, enchilada sauce, and half cup of coke in blender and blend till smooth.
Add mixture to crock pot and about a half a liter of coke into crock pot. (so you should have 1/4 of the bottle left)
Let cook for another 2-3 hours, till tender. An hour before serving shred pork. and let sit in juices.
serve in burritos, tacos, salads :)
*costco has a GREAT pork roast. you get 4 of them for about $15. The are lean and very inexpensive for the price per pound. They also make great roasts for your sunday dinners. I used ONE of these roasts for the dinner and it fed all 6 adults + kids with a little leftover.

I made Pico de Gallo to go on top.
And Amy made a wicked guac we stuffed in our burritos. She needs to post that recipe.

We used the leftovers on a homemade pizza with pineapple and lots of cheese. SO yummy.

  1. I am making this right now!! I am in the second step of the process...about to dump the coke and add the other stuff. Hope it turns out yummy...I can't wait!
