Pumpkin Roll

If you have never made a pumpkin roll, you need to try it out! They are super easy and so delicious! Plus adds a variety to the typical holiday desserts! This is a recipe I inherited from my sister Desi! She makes them all the time, and it is no wonder why.

Ingredients:
3 eggs
1 C sugar
2/3 C pumpkin
3/4 C flour
1 tsp lemon juice
1 tsp baking powder
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
2 tsp cinnamon
Instructions
Beat eggs until fluffy, slowly add sugar and continue to beat. Then mix in remaining ingredients. Pour and smooth evenly into a cookie sheet lined with foil or parchment paper. *I prefer parchment. Bake at 375 degs for 12 mins. Cool and sprinkle a light layer of powder sugar over. Invert on to clean surface, towel or parchement paper work well. Spread cream cheese filling evenly over inverted cake. Gently roll cake "hot dog" style so that the cake is the length of the cookie sheet. Place on large platter and sprinkle with powder sugar. Refrigerate and serve chilled. To cut slices of the pumpkin roll, use a piece of floss or string, same as cutting out homemade cinnamon rolls.
Cream Cheese Filling
Ingredients:
1 C powder sugar
8 oz Cream Cheese*
1/4 C butter/margarine*
1/2 tsp vanilla
at room temp
Instructions
Beat together until nice and creamy smooth!
(After spreading over cake, don't forget to lick the bowl clean)
