Glazed Apple Spice Cookies

This is a great fall recipe with lots of ways to make it and share it! Enjoy!

1/4 C shortening
1/4 C butter
1 1/3 C packed brown sugar
1 egg
2 C sifted flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1 C chopped walnuts
1-1/2 C apple, peeled, cored, diced (add as much or little as you like)
1/4 C milk

GLAze:
1 1/2 C powdered sugar
1 Tbsp butter
1/2 tsp vanilla
2 1/2 Tbsp half and half (I didn't have any so I used regular milk and it worked just fine)
1/4 tsp cinnamon


Beat shortening, butter, and brown sugar until light and fluffy. Beat in egg. In separate bowl combine flour, soda, powder, salt, cinn., cloves, and nutmeg. Add nuts and apples stir. Add to other ingredients and add milk. Mix well. Drop SMALL spoon fulls (they expand a lot)onto cookie sheet covered in parchment paper (or slightly greased) Bake at 350 degrees for 12-15 mins. Spread glaze on warm cookies.


Instead of making it into cookies, you can pour all of the mixture into a greased 9x13 pan and bake it for 15-20 mins or until you can stick a toothpick in and it comes out clean. Then apply glaze to warm cake. OR you can put it into muffin tins lined and bake 12-15 mins, you just have to keep an eye on them and judge for yourself. Then apply glaze to warm muffins.
