Dinner in a Pumpkin and Roasted Pumpkin Seeds

Fall is in the air and festivities are beginning. This meal will bring the party to the table. 

1 medium pumpkin
1 1/2 lbs. ground beef
1/2 tsp. salt
3/4 cups celery, chopped
3/4 cup onion chopped
3/4 cup carrots, sliced or baby
1/3 cup green peeper, diced
1 tsp. soy sauce
1 T. brown sugar
1 can cream of chicken soup
1 can mushrooms, sliced and drained
1 can sliced water chestnuts, drained
2 cups rice, cookedYou may need to double this to fill the pumpkin completely, depending on the size of pumpkin you are using. We usually do!

Cut out 3-4 inch top around the stem of the pumpkin and remove the seeds and pulp. You can paint a face on the pumpkin with markers at this time if you wish, it serves as a great distraction for the kids while you prep everything else. Set the pumpkin aside. Brown meat and add vegetables and cook for 15 minutes. Add the rest of the ingredients. Spoon mixture into the prepared pumpkin. Place on foil covered pizza pan and bake 1 1/2 hours at 375º F. The pumpkin should be edible.

Clean seeds
place on parchment papered cookie sheet
spray with cooking spray
sprinkle with salt or any seasonings you want
Roast till golden brown at 350 degreees

  1. I love pumpkin seeds. and dinner in a pumpkin...however, I've always been to scared to make the dinner in a pumpkin. just let other make it for me. This year I'm doing it!! Thanks Steph!!
