Buttermilk Banana Bread



This banana bread is seriously the best. The BEST! I finally got the recipe from my friend (thanks Megan) who got it The House of Smiths.
The link will take you directly to the recipe on her site along with pictures and a cute recipe card to print, but I'll write it out here too.

MIX TOGETHER:
3 C. flour
1 1/2 C. sugar
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt

SET ASIDE

IN A SEPARATE BOWL, COMBINE:
3 eggs
3/4 C. butter
1 1/2 C. buttermilk
4 large mashed bananas

ADD DRY & WET INGREDIENTS. MIX WELL.

****Secret Weapon...an absolute MUST: coat the pans with PAM or an non-stick spray and then sprinkle cinnamon/sugar mixture on the pan before putting it in the batter. it will create a light crunchy crust.

Bake @ 350 degrees for 30-35 min.
RESULTS ARE BEST IF MADE IN SMALL LOAF PANS (she says it's the ONLY way to bake it...consistency isn't the same in the larger loaf pan).
Yields about 6-7 small loaves.

  1. yum. Is this what you made for me tonight? I LOVED IT. we ate it too fast. big loafs are nice only for that reason. I've been on a banana bread kick but can't seem to bake it evenly- so little loafs it is from now on. Thanks for that tip and the recipe. YUMMY!
