Green Enchiladas

Green Enchiladas

Enchiladas are easy, yummy and hard to mess up, so I love to experiment with them! I tried out this combination a few weeks ago and it was a hit!




Green Enchiladas
Ingredients
1 can Cream of Chicken
1/2 Onion minced
1 8oz pkg Cream Cheese at room temp.
1 7 oz can of diced Green Chilies
1 tbsp Garlic minced
2 tsp Cumin
Salt and Pepper
8-10 Large Flour Tortillas
1 28oz can of Green Enchilada Sauce
1/4 c or so of shredded Cheese (mexi blend or cheddar)
3-4 chicken breast cooked and shredded (Can boil or crockpot with a little butter)
Instructions
In large bowl combine cream of chicken, onion, cream cheese, green chilies, cumin, garlic and salt and pepper to taste. Spoon mixture into tortillas and place in a large sprayed casserole dish. When all are assembled pour enchilada sauce over, covering all the tortillas. Top with the shredded cheese, cover with foil and bake for 40 mins. at 350 deg. Uncover during last ten minutes of cooking and enjoy!!

  1. This is a favorite at our house! I love it just like this, but occasionally we add some cooked white rice with chopped cilantro inside...Oh yummy! If you like that sort of thing try it. It is so good!
