German Pancakes

You know those slow Saturday mornings, when you wake up and have nothing pressing to do and don't feel like cleaning either.. so you fix up your favorite breakfast and lounge in your PJ's.  Well, this is that favorite breakfast we fix up. The pancakes are warm and buttery, such a wonderful indulgence of comfort food in the morning. Add some fresh berries on the side and it's complete. And lucky me, my husband loves to make it. The wonderful thing about these pancakes is that they are totally delicious plain. I will eat them straight out of the pan. A little syrup makes that absolutely heavenly...

Ingredients:


6 eggs
1/2 c sugar
1 c flour
1/2 tsp. vanilla
1 c milk
1/2 c butter
1/2 tsp salt


Directions:


Melt butter in a 11 X 13 baking dish in the oven at 350 deg. Blend eggs in a blender for at least 2 mins. (This is crucial to get the pancakes nice a thick.) Add milk, flour, sugar, vanilla, and salt. Remove melted butter from over and pour egg mixture over melted butter. Bake @ 400 deg for 10 - 15 mins. or until center is set and top is golden brown. Batter and edges will rise up the edges of the pan for a fun effect! My kids love to watch it grow.

  2. I have a similar recipe but we always called them pop up pancakes. Things always have lots of names. We have not had them in a long time either...hmm.

  3. Ha ha I made these for dinner Sat night! I don't add sugar though, a few less calories and they turn out just as good! :)

  7. This is basically custard with extra flour:)

    1. Yes your right.. the basic recipe is very similar to a baked custard! The extra flour gives it a nice set thick texture. We called them "German Pancakes" growing up so the name has stuck. It's a great dish.
