Bread Sticks

While mine are rising right now, I thought I would post this awesome recipe. It's not mine, as recipes usually aren't. But these are really easy, and So delicioso!

Bread Sticks

1 1/2 cups of warm water
3 cups flour (about)
1 T yeast
1/2 tsp salt
2 T sugar

In bowl mix warm water and yeast. Make sure yeast is good by letting it sit for a couple minutes and rise. Add sugar and salt. Start mixing and add flour till it is smooth and elastic. Let rise for 10 minutes in the bowl. Melt 1 cube of butter and pour in edged cookie sheet. Roll dough out in rectangle about the same size as the cookie sheet. Cut in 1"x4" strips using a pizza cutter. Roll in the butter, and then place back on cookie sheet. Sprinkle with your favorite toppings such as: garlic salt, parmesan, parsley flakes, italian seasonings, seasoning salts. Let rise for 15-20 minutes more on the pan and then bake at 350 deg for about 20 minutes. Until the edges are just starting to turn  a beautiful golden brown.

Easy Dinner Idea

I'm always in need of ideas- not necessarily a recipe. SO here is a really easy idea...
Breakfast Sandwhich
Biscuit or English Muffin
fried egg
cheese
meat: ham, sausage, bacon

served with seasonal fruit, yogurt
I sometimes buy a special juice (like a mixed variation)or make chocolate milk.
its fun...mixes it all up occasionally. Syd LOVEs it, and Jack eats everything too...just in pieces.

Filipino Pansit


When I was in college,  my roommates mother (Rachelle) would fix us her Filipino father's favorite dish. Our house of crazy girls would fill up her dinning table, hungry for a delicious and filling dinner that college kids rarely get! There was some flavor that made my mouth water every time she fixed it and I could never get enough of it! Anyhow, after 4 years of searching for what that dish was with it's awesome flavor, I found it! A fellow nurse I work with at the hospital I work at is Filipino and gave me a recipe for the dish I described to her.... She called it Pancit.

So what is Pancit? Pancit or Pansit.. is a basic Filipino dish that can be made many ways.. Like Pizza to an Italian.. how many different pizza's have you ever eaten? But there is a basic model to the recipe that makes it a pizza or pancit. Most pancits have chicken/pork with maybe shrimp for the meat, combined with a rice noodle and vegetables. It really is a simple dish just full of flavor. And it is always always.. topped off with lemon juice and soy sauce. 

So here is the recipe for the delicious goodness from my early college days. A few of the key ingredients that may not be so typical in your cupboards.. First is the Rice Stick. These are pretty easy to find down the Asian isle and pretty cheap and gluten free. (nice) This time around I bough a linguine style noodle just for kicks. I normally buy the regular spaghetti shaped. In the end I decided I liked both, but it was more noodle-ly with the linguine style.

Next is the Oyster Sauce.. this adds another savory dimension to the dish. And don't worry, it doesn't taste like fish. If you are like me and have a very hard time with the "fishy" taste, you need not fear my friend. No "fishy-ness' going on around here.

And I'm pretty sure I don't need to talk about the lemon and soy sauce, just don't forget those two. They are just yum.

Start out by thinly chopping your cabbage, to make it more of a shredded texture. Slice up a few celery stalks, 3-4. And I buy the pre-shredded carrots.. if you have a tool to shred carrots go for it, if not then the packaged ones work great.


Next chop up your onion and 3 chicken breasts. Saute the chicken, garlic and onion with oil in a wok. (If you don't have a wok, use a very large pot.) When done add in your chicken broth and seasonings. Pile on the veggie wheel (cabbage, carrots and celery). It is going to look huge at this point, but the cabbage cooks down to almost nothing. Bring to boil, cover with lid and then turn down heat and simmer.



Meanwhile, you need to prepare your rice noodles. In a large bowl soak your noodles in very very hot water.. for 3-5 min. Once they are softened, drain and add to the chicken and veggies. Toss all together! If there is still broth, allow the noodles to simmer with it and they will absorb the remaining. Serve warm with lemon slices and additional soy sauce.


Filipino Pancit
Ingredients
1 pkg of rice noodles or cornstarch stick (can be found at any Asian food market..it is inexpensive)
1 med onion chopped
1 clove garlic
1 c pork or chicken meat thinly sliced
Veggie Wheel and Seasonings:
1 C carrot sticks chopped
1 C thinly sliced celery
1 small head shredded cabbage
5 tbsp soy sauce
2 1/2 C soup stock (chicken is good)
1/2 tsp black pepper
1/2 tsp salt
2 tsp oyster sauce
Directions
In a wok or large skillet saute chicken garlic and onion until golden brown in a little oil. Add veggie wheel and seasonings and bring to boil.
Next you need to soak your rice noodles. Do this in a large bowl with hot water for about 5 mins or until soft. Drain and add to pan. Mix together and let rice noodles absorb some of the stock and finish cooking, about 3-5 mins.

Serve immediately! Makes a generous amount, good for about 4-5 adults.

Dont forget to top with soy sauce and give each person a lemon slice to sqyeeze over.
You would never guess that this would taste good but it is that particular flavor that I missed for 4 years!!!
Soy Sauce with Lemon juice!! SOO GOOD!! There is even soy sauce with the lemon juice or lime juice already added because it is so popular in the filipines! It is called...Toyomansi. If nothing else try just that the next time you are eating asian food!

German Pancakes

You know those slow Saturday mornings, when you wake up and have nothing pressing to do and don't feel like cleaning either.. so you fix up your favorite breakfast and lounge in your PJ's.  Well, this is that favorite breakfast we fix up. The pancakes are warm and buttery, such a wonderful indulgence of comfort food in the morning. Add some fresh berries on the side and it's complete. And lucky me, my husband loves to make it. The wonderful thing about these pancakes is that they are totally delicious plain. I will eat them straight out of the pan. A little syrup makes that absolutely heavenly...

Ingredients:


6 eggs
1/2 c sugar
1 c flour
1/2 tsp. vanilla
1 c milk
1/2 c butter
1/2 tsp salt


Directions:


Melt butter in a 11 X 13 baking dish in the oven at 350 deg. Blend eggs in a blender for at least 2 mins. (This is crucial to get the pancakes nice a thick.) Add milk, flour, sugar, vanilla, and salt. Remove melted butter from over and pour egg mixture over melted butter. Bake @ 400 deg for 10 - 15 mins. or until center is set and top is golden brown. Batter and edges will rise up the edges of the pan for a fun effect! My kids love to watch it grow.

"Root Beer Rocks" or Stuffed Bundles


I got this recipe from a college friend and I just made them this week. I used ham and cheddar cheese inside. We all Loved them and I want to make them again very soon! Easy for a non-cook like me.

(These are called Beer Rocks because they should be served with Root Beer)

Rolls:
1 T yeast
1/3 cup sugar
1 cup warm water
2 T oil
3 1/4 cup flour

Filling:
1 lb cheddar cheese, sliced into 3/4-inch cubes
1 package pepperoni slices

In a warm bowl, mix yeast, sugar, and water. Let stand 10 minutes, then add oil and flour. Blend and knead only a few minutes and form into a ball. Let rise one hour. Punch down and divide into 10 balls. Roll each ball into a circle and fill with four or five cheese chuncks and three or four slices of pepperoni. Bring four corners together, twist, and place on greased cookie sheet with twist side down. Brush with melted butter and let rise until double. Bake at 350 degrees for 15 minutes. Can also use rice and ham, ham and swiss, ricotta and cooked sausage, or anything else you can think of. (I usually double this recipe if more than four will be eating.) I did not double it and it made about 10-12

Doxey Pumpkin Cookies




These cookies are a family recipe. I'm taking dinner to a family tonight- so had to make dessert! yum. They are nice and plump...really moist. I've always had of compliments on them.

1 cup vegetable oil
3 cups sugar
2 eggs
5 cups sifted flour
1 large can of pumpkin (29 oz)
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp nutmeg
2 tsp cinnamon
2 tsp vanilla
1 pkg choc chips

Beat Oil, sugar and eggs

in a different bowl sift all dry ingredients together.

alter scoopfuls of pumpkin and flour into the eggs and sugar mixture while beating. Mix until smooth.
Add vanilla and choc chips last.

cook in preheated oven @375 for 12 minutes on a greased cookie sheet.
makes about 4 dozen.
