Hearty Oatmeal Waffles

My kids kinda love waffles and pancakes. Eggo waffles make a regular appearance on our breakfast tables. Don't judge. When I can, I'll make a batch of waffles or pancakes and throw them in the freezer to toast up another day. I feel a little better about the homemade versions. I think that the kids like them better too to be honest. They stay fuller longer and seem more satisfied. Over the Christmas break I found this recipe in my mom's old hodge podge cook book. I liked it but decided that in need a smidgen more sugar and salt for more flavor. It recommended being served with a fruit syrup.. and I agree. Fruit on this is delicious!

So here you go... some oatmeal waffles your momma heart can be happy about serving.

First you need to make some buttermilk if you don't have any on hand. Click here for instructions of how to do so. And whisk up an egg. Toss all your dry ingredients together and then combine everything along with your oil and vanilla!




Pour into a waffle pan and bake!

Hearty Oatmeal Waffles
Ingredients
1 Cup Quick Oats
1/2 cup White Flour
1/2 Cup Wheat Flour
2 Tbsp Sugar
1 tsp Baking powder
1 tsp Baking Soda
1/2 tsp Salt
1 Egg lightly Beaten
2 Cups Buttermilk
2 Tbsp oil
1 tsp Vanilla
Directions
Whisk all ingredients together and pour into waffle pan!

    1. I haven't tried freezing this particular recipe but I am sure it would be great! Yes I use the toaster, helps them stay more crisp!

  2. I had to add a 1/3 cup more of flour but they were so yummy! and very filling! Stop before you think your full ;)

  3. I like the flavor of these, but mine keep falling apart... they don't stay together in the waffle maker. Do I need more flour or do i need less heat on the waffle iron? Anyway... they look nothing like yours but I really want them to work cause the flavor is good. Any tips??

    1. Hmmm. What do u mean by fall apart? Once the batter is cooked they crumble? I haven't had that problem, but the batter is a pretty liquidy batter. Works and tastes great but if ur having problems trying adding a little more? If ur iron the kind u flip around?
