So I'm totally addicted to Quinoa right now and can't get enough of it. This recipe is from Everyday Food and is amazing!!
1 cup cooked quinoa or brown rice
3/4 cup flour
2 tsp baking powder
1/2 tsp course salt
1 large egg, plus 1 large egg white (I accidentally used 2 whole eggs and it worked just fine)
1 tbsp melted butter
1/4 cup low-fat milk
2 tbsp maple syrup
In a medium bowl, whisk together quinoa, flour, baking powder, and salt. In another medium bowl whisk together wet ingredients (egg, egg white, butter, milk and syrup) until smooth. Add wet mixture to dry mixture and whisk to combine.
Cook like you would normal pancakes and top with fresh fruit!
yields abt 12 cakes
per cake: 73 cal, 1.8 g fat (0.8 g sat fat), 2.4 g protein, 11.8 g carb, 0.5 g fiber
