For the salad --make it extra fancy by using 2 different salad greens (I always use at least one bag of baby spinach and then a spring mix). Toss in some sliced strawberries, shredded Parmesan cheese and your caramelized almonds. (Only diva's require caramelization.. so high maintenance but will impress.)
To make those, --heat 1 cup of almonds, sliced or whole, and 4 T sugar over the stove while stirring until all the sugar is dissolved and attached to the almonds. Add more sugar if desired. (Of course it is!) Remove from heat and let cool.

Sugared almond Salad with Poppy Seed Vinaigrette Dressing
Ingredients
1 bag of Spinach
1 bag of Mixed greens
6-8 sliced Strawberries
Parmesan Cheese
1 Cup Sliced Almonds
4 tbsp Sugar
Poppy Seed Vinaigrette Dressing:
2 cups canola oil
2/3 cup white vinegar
1 tsp. salt
1 cup sugar
2 tsp. mustard
1/2 a red onion
1 T. poppy seeds

For the Dressing:
Blend all ingredients together until smooth and chill before serving. This makes a ton! Great to use half for the salad and half to save for later!
