Baked Creamy Chicken Taquitos

Spring put this on our blog years ago! I all admit it took me a while to make it. But now it is one of our family favorites. They are SOOOO good, and rather easy. Throw chicken in the crockpot while you are at work, or boil it fast when you are starting dinner. Shred and toss with other ingredients. Roll. Bake. Delish!!
Serve with salsa, guac and sour cream....heaven.

Baked Creamy Chicken Taquitos

Makes about 15 taquitos

Ingredients:
1/3 c cream cheese
1/4 c green salsa
1 T fresh lime juice
1/2 t cumin
1 t chili powder
1 t garlic
3 T chopped cilantro
2 T sliced green onions or reg onions
2 c cooked shredded chicken
1 c grated pepperjack cheese (or any cheese you have on hand)

small corn tortillas ( I like a local company that hand makes them, they are easier to work with without breaking and they taste way better. It's worth the extra dollar to get good quality tortillas.)
kosher salt
cooking spray

Directions:
heat oven to 425. line baking sheet with aluminum foil and spray with cooking spray.

Combine first 10 ingredients mix well. (You can double the recipe and freeze the filling. That way you just pull out a batch and thaw it without having to touch a knife or mixing bowl before dinner.)

place 10-15 corn tortillas on a microwave safe place.
Cover with 2 very damp (not dripping wet) paper towels.
Microwave for 1-1:30.
(tortillas will be hot! but you need them hot. work fast=no burns)

Place 1-2 T of chicken mixture on the lower third of a tortilla, roll as tight as you can. lay seam side down on baking sheet. spray tops with cooking spray and sprinkle with sea salt (MY favorite part)
Bake for 15-20 minutes or until edges are crisp and brown.

Dip them in salsa, sour cream and guacamole

crunch salt on the top is my FAVORITE...wait, already said that. its soo good. wait. I already said that too.

  1. I have this recipe and it is one of my favorites! I make it all the time and we love it! I started using flour tortillas and really like it that way. :)
