Apple Carrot Soup


This is a very yummy recipe I obtained from and LDS Living Magazine! This is the type of soup that you have on a chilly day with a yummy grilled sandwich to dip with!  ok ok enough talk more recipe! 

Ingredients!!  ... no surprises here!
2.5 pounds  carrots peeled and chopped
5 medium apples (Golden Delicous recommended), peeled, cored and chopped
3 tbsp margarine or butter
2 onions, finely chopped
3 cans (14 oz.) chicken or vegetable broth
2 tbsp sugar
2 tsp salt
2 tsp fresh ginger, peeled and grated
3 cups water

optional garnish:
half-and-half or heavy cream
fresh chives

Directions:
In a 5 quart Dutch oven or pot (this makes alot), melt butter over medium heat. Saute onion until tender and golden. Stir in apples, carrots, broth, sugar, salt, ginger, and water. Heat to boiling. reduce heat to simmer, cover and simmer 20 mins or until the carrots are tender.  Puree the mixture with a hand blender until smooth. Serve with optional garnish and side sandwich or bread. Extras can be frozen and stored up to two weeks. Pin It
