Grandmother's Buttermilk Cornbread


Grandmother's Buttermilk Cornbread
1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt

Preheat oven to 375 deg. Grease an 8 in square pan. Melt butter in large skillet. Remove from heat and stir in sugar (I mixed everything in the same pan that I melted the butter in=less dishes). Quickly add eggs and bet until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for about 30 min. (Mine actually only took 25, so check it a little early). It is done when a toothpick comes out clean. Top with butter and honey and enjoy! We had the leftovers for breakfast and I think it was even better the second day!

Egg Bake

A new twist to the Incredible Egg! And can be a fun family dinner or breakfast.

To make this scrumptious little thing, there is a basic pattern to follow then you throw in your own creativity!


First you choose your bread... French Bread works great to make one big Egg Bake. But for even more fun try a smaller roll that way you can individualize everyone's Bake! I used these Bolillo Rolls from Sams Club.


Start buy cutting out the middle to make a cavity or bowl shape. And tearing the middle into bite size pieces. Set aside.


Okay, to make two of these bakes I used 5 eggs. Determine how many eggs you will need by the size of your bread. For a loaf of french bread you would probably need 10 eggs. Also use less eggs for the amount of ingredients. Such as if you add ham and sausage then you probably could cut out 1 egg just for the volume inside the bake.


Then just mix the eggs, whatever ingredients and then bread in a bowl. Then pour mixture into the bread bowl made. Baste the edges of the bread with butter and bake for approx 30 mins at 350 deg F.


The fun thing is that you can add whatever you want! Just think of what you would add to an omlet and throw it in! Tomatoes, Peppers, Green Onions, Cheese, Oregano, Basil, Garlic, and more! Very yummy and filling!
