You might remember the original tomatillo chicken recipe...
Well I just took that sweet thing to the next level. Normally I make it into a burrito with some rice and cheese, sour cream and all the good stuff. Love it. But I LOVED this.
I made the chicken and simply placed it over some Baby Arugula, added in some Grape Tomatoes, Shredded Carrots, Cilantro then.. Drizzled lime all over. Oh my. Tasty tenderness. {My mouth is watering}
And, I don't know if you notice but look at the ingredients~ Holy Lean-ness!! and I'm not even on a diet {should be but not}. Seriously go for the Arugula ~ 0.39 percent of the flavor is packed in that stuff.

Tomatillo Chicken Salad
Ingredients
6 chicken breasts
1 medium onion chopped
2 garlic cloves minced
1tsp ground cumin
1tsp oregano
1tsp salt
1tsp pepper
T lemon juice
1C tomatillo salsa (salsa verde)
1.5C sour cream
Instructions
Combine everything (except sour cream) in a crock-pot and cook on low for 6-8 hours or high for 3-4 hours. When done shred chicken and add sour cream. Serve the chicken and sauce in tortillas.
OR Add on top of salad as described above.
Enjoy and try not to think about how healthy your being!
